(Good for four servings)

• 4 sea bass fillets

• 12 prawns

• 1 teaspoon minced garlic

• 1 red bell pepper, sliced

• 1 green pepper, sliced

• 1 yellow onion, sliced

• 2 tomatoes, diced

• Juice of 1 orange

• Olive oil

• Dry oregano

• Butter

• Salt

• Pepper


Add 1 tablespoon of olive oil in a skillet on high heat.

Add garlic, red bell pepper, green onion, yellow onion and tomatoes. Season with a pinch of salt, pinch of pepper and pinch of dry oregano, stirring or tossing regularly for four minutes. Add prawns and orange juice, then reduce heat to low, stirring occasionally for three minutes until prawns are cooked. Add tablespoon of butter, stirring or tossing until melted.

In a separate pan, heat 1 tablespoon of olive oil on high heat. Season both sides of sea bass with salt and pepper to taste before adding to pan for a quick sear (10 to 15 seconds each side), then put pan in oven for six minutes at 350 degrees.

Place prawns and veggies on plate, place sea bass on top and serve.
